As I understand it, a RAP-10 card only supports GM (not GS) MIDI.  However, what would happen if you were to connect a RAP-10 via MCB-10 box to a SC-55?  (Would the SC-55 only be capable of producing GM as well in this case?)

No, the SC-55 would play back a GS midi file normally.  You must separate a midi interface from a midi module.  A midi interface transfers data by a certain standard.  It is in the data that you will find support for GS, XG, LA or any other synthesis standard.  The midi module must make of that data what it will.  The RAP-10 contains the functional equilavent of a UART-only midi interface and (almost) an SC-7 midi module.
