There are collections for Space Quest, King's Quest, and Leisure Suit Larry that are in print and ship with DOSbox.  I'm wondering, how does the music sound on these classics on a modern PC with Windows 7?

Yes, but you can edit resource.cfg for mt32.drv or genmidi.drv, can't you? I don't know if you have to add the drivers yourself.

Yeah, the drivers should still be there. But unless you have an MT-32 it's not going to sound right. General MIDI compatible games will sound decent enough through Windows' built in Roland GS emulation. If you pick these collections up you should use Collector's patches/installers at http://sierrahelp.com/ which will correctly fix up all the games in each collection properly the way they were meant to be played. MT-32 only games will be set up for Adlib and General MIDI compatible games will come out of Windows' Roland GS emulator. If you do have an MT-32 you will have to edit the resource.cfg files yourself and also set the MIDI output of DOSBox to whatever device is connected to your MT-32.
